A seasonal twist on common muesli cookies.  These are great made with our Classic Swiss Organic Muesli, which has almonds, cranberries, dates, and raisins.

Whole Grain Pumpkin Chocolate Chips Cookies

Ingredients
  • 2 cups muesli
  • ¾ cup whole wheat flour
  • ½ cup pumpkin puree
  • 1 large egg
  • 1 tsp vanilla extract
  • ¼ cup granulated sugar
  • ¼ cup dark brown sugar
  • ¼ tsp baking powder
  • ½ tsp baking soda
  • 1 teaspoon pumpkin pie spice
  • ½ cup semi-sweet chocolate chips

Instructions
  1. Preheat oven to 350 degrees F
  2. In a mixing bowl whisk together pumpkin, egg, and vanilla until well combined.
  3. Add muesli, flour, sugar, baking powder, baking soda, pumpkin spice, and chocolate chips and mix
  4. Line a baking sheet with parchment paper and drop spoonfuls of dough onto sheet
  5. Flatten slightly, as dough is thick
  6. Bake for 12-14 min until lightly browned
  7. Transfer to a wire cooling rack
