Pumpkin Butterscotch Granola Bars Recipe

Ingredients
  • 3 cups Athlete Fuel muesli
  • ¼ cup coconut oil
  • ¼ cup honey
  • ¼ cup brown sugar
  • ¼ cup pumpkin puree
  • 2 tsp pumpkin spice
  • ½ tsp salt
  • 1 cup butterscotch chips

Instructions
  1. Preheat the oven to 325 degrees and prepare a 9x13x1 inch pan with a sheet of wax paper
  2. Combine the muesli & coconut oil
  3. Add honey, brown sugar, pumpkin, spice, & salt, mix until combined
  4. Add butterscotch chips and mix
  5. Pour mixture onto a the prepared pan and spread it evenly, pressing down with a spatula
  6. Bake granola bars for 30 minutes (chewy) to 40 minutes (crunchy)
  7. Let cool 10min then flip over onto a cooling rack and remove wax paper while still warm
